mango cakes



Seasonal Mango cake

Ingredients

Flour – 1 cup

Eggs – 2

Sugar – 1 cup

Refined oil – 3/4th cup

Baking powder – ½ tsp

Mango – 1 finely chopped, if needed can add mango essence (I never got hold of one though)

Preparation:

Step 1: Beat the eggs and sugar together till the sugar is dissolved.

Step 2: Mix the refined oil and the flour with your hands into a smooth batter. There should not be any lumps left.

Step 3: Mix the egg batter and flour batter together along with the baking powder. Make it smooth.

Step 4: Grease the cake dish with butter.

Step 5: Pour in a layer of the batter into the greased dish. Then put in a layer of chopped mangoes. Pour in another thin layer of the batter. You can also garnish the top with a sprinkling of finely diced almonds.

Step 6: Pre-heat the microwave in the convection mode at 180 degrees for 2 mins.

Step 7: Put in the cake dish on the lower rack and bake it at the same temperature for 35 mins.

After the baking, let it sit in the oven for 10 mins and then take it out.
